This is a topic that became controversial and was not intended to be. I am glad it received a lot of attention, yet there was confusion about the truth about saturated fat and its safety.
This article came from Dr Jeremy Webster who is on my radio show often. I wanted to share it with all of you.
It has been falsely vilified due to faulty studies in the 1950's that used hydrogenated oils (trans-fat) and attributed all of the bad results to saturated fats. The fact that the author repeats this false conclusion that saturated fats are bad for your health just proves that they're uninformed and does not understand fat metabolism.
Saturated fat is your bodies natural energy storage device so it makes no sense to assume that saturated fat is the most harmful fat to your health. Besides, plenty of research backs me up. Look at westonaprice.org
You can find plenty of information on tribes and colonies who eat huge amounts of saturated fat yet have virtually no heart disease.
Another thought- breast milk is about 50% lauric acid which is a medium chain saturated fat. Coconut oil is 47% lauric acid. Do you really think breast milk is an extremely damaging form of food???
Canola oil is quite simply not fit for human consumption. It is extracted using harsh methods including heat and chemicals such as hexane that damage the oils.
Further the fats in canola oil are primarily unsaturated which means they will be quickly ruined when exposed to heat, much less the extreme heats involved in popping corn. Even if canola were a healthy unsaturated oil such as fish, flax, sesame, sunflower (if extracted properly), or primrose oil it would still be destroyed by heating and converted into a dangerous fat.
